Spiced Pumpkin Pie Recipe

My youngest brother is a pumpkin pie connoisseur, and this is his favorite recipe I’ve made for him. This pie is really thick and smooth – delicious!

  • 1 1/4 cup packed brown sugar
  • 1 Tbs. cornstarch
  • 1/2 tsp. salt
  • 1 Tbs. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. nutmeg
  • 1/8 tsp. ground cloves
  • 2 cups fresh pumpkin, pureed
  • 3 eggs, fresh if you can get them 🙂
  • 1 cup heavy cream
  • 1/3 cup milk
  • Small splash of vanilla
  • 1 piecrust

  1. Preheat oven to 375*F.
  2. In a bowl, whisk together brown sugar, cornstarch, salt, cinnamon, and spices. Add the pumpkin, eggs, cream, and milk, and whisk.
  3. Pour the filling into the pie crust.
  4. Bake for 60-65 minutes at 375*F. If the crust starts to burn, you can pull out the pie, and cover the edges of the crust with tinfoil and then pop it back in the oven to finish baking.
  5. Stick a fork in the middle of it, and make sure it comes out dry. When the fork (or toothpick) comes out dry, you know it’s done.
