Fried egg with smoked gouda on an English muffin

Once again, the eggs are racking up in the fridge, so it was egg again for dinner tonight! I toasted an English muffin at 350*F for about 8 minutes with a bit of butter and smoked Gouda and green onion. At the last minute, I topped each half with a slice of tomato and broiled it for a minute or two. While the muffin was in the oven, I fried an egg in a bit of olive oil with diced tomatoes and green onion. Would love to try this out with a hollandaise sauce sometime!
